Vegetarian Vegetable Soup

* 2 medium carrots, cut into slices
* 2 stalks celery, cut into 1-inch slices
* 1/2 cup onion
* 2 cups of water
* 2 cups of tomato juice
* 1/2 tsp each salt and pepper
* 1 tsp soy sauce
* 1 tsp oregano
* 3 cloves garlic, chopped
* 1 Tbs olive oil

Place carrots, celery, and onion into a blender with 1 cup of water. Process until smooth. Combine all ingredients except olive oil in saucepan and bring to a boil. Cover and simmer for 6 minutes. Remove from heat and stir in olive oil.
